We feature two types of Jamaican Bitters, which have similar ingredient lists, but the formulas vary drastically. Jamaican No.2 is bright and acidic, with grapefruit and hibiscus overtones and underlying spice notes of allspice, ginger and vanilla.

Muddle jalapeno and simple syrup in the base of the glass. Add the remaining ingredients (except the seltzer), then top with crushed ice until the glass is 3/4s full. Swizzle vigorously until the glass is frosted. Top with seltzer and an additional scoop of crushed ice. Garnish with a fresh cilantro sprig.
